Forgetting to defrost your steak is one of the most painful feelings ever. First there's the panic, then the denial, as you try to to convince yourself that defrosting your slab of meat in the microwave will work. Then comes acceptance, as you (un)happily decide to eat something else for dinner. And if Twitter is any indication, this phenomenon is very widespread.

But how long does it really take to defrost?

How does it work?
These work in two ways: the board has much greater heat capacity than your food. Also, because metals conduct heat quickly, it will draw heat from both the air and the underlying surface (the counter, typically).

“Is it safe”? Presumably you're worried about contamination? In that case, consider that you can cover the item that's defrosting with parchment paper before putting it on the surface. I'm sure the surface is safe to wash, so I'm assuming your concerns are for while the item defrosts. In that case, understand that it will primarily matter what temperature the surface of your food reaches, how clean it is, and how long it stays “warm” (above 3–5 °C).
